Don't you just love a recipe that the whole family can enjoy! Well this salmon and tropical coconut rice are definitively my go to. Clean plates all around every time. Take a look below for the recipe.
Ingredients
- 1 can (13.5 oz) coconut milk
- Lemongrass powder or 2 Sprigs of fresh lemongrass
- 1 Low sodium stock cube (or salt if preferred)
- 1 cup of rice
- garlic powder
- white pepper
- paprika
- Avacado (optional for serving)
Steps
1. firstly, wash your rice with cold water. Then add in your coconut milk, lemongrass and stock cube.
2. Bring the rice to a simmer. Once you see that the water is boiling, reduce the heat to low and let it cook for around 10 - 15 mins.
3. Whilst your rice is cooking season your salmon with pepper, paprika and garlic powder. ( I like to add salt to my own portion later, if needed. This way baby gets to have less salt intake.)
5. Fry the salmon on a medium heat. If it starts to burn then reduce the heat to low, and then cover.
6. And voila! thats it! I always serve baby's portion alongside some fruits and veg to make a healthy, balanced meal.
